Onion marmalade

A sweet and rich onion marmalade with red onions, brown sugar, apple juice and white wine vinegar. Perfect as accessories for roasts, balancing the saltiness with a mellow, slightly tangy flavour.

A classic onion marmalade with plenty of flavour

Onion marmalade is simple accessories that can enhance many dishes. When the red onions are allowed to simmer gently, they develop a natural sweetness which, together with brown sugar, apple juice and white wine vinegar, creates a lovely balance of sweet and tangy flavours.

The finished marmalade has a soft consistency and a rich flavour that goes particularly well with roasts. It can be made well in advance, cooled and served when the rest of the meal is ready.

For this recipe, a saucepan 14cm is a good choice, as it gives the onions room to simmer evenly. A sharp chef's knife also makes it easy to finely slice the red onions so they cook evenly.

Why add apple juice?
