Creamy potato soup with chive oil

A rich and creamy potato soup with vegetables and a fresh chive oil that adds both colour and flavour. A warming soup that is easy to make and perfect for chilly days.

A classic potato soup with a fresh twist

Potato soup is a true everyday favourite when you want something warm and filling on the table. The tender potatoes, onions, carrots and garlic give the soup a rounded, rich flavour, while the chive oil adds a fresh, aromatic contrast that lifts the dish.

For this recipe, our large ZERO pot 28cm is the obvious choice, with plenty of room for both vegetables and stock. This makes it easy to let the soup simmer gently until the potatoes are completely tender and ready to be blended to a silky-smooth consistency. Our cordless mini chopper is also ideal for this dish with its variety of vegetables

Recipe for creamy potato soup with chive oil

Serves: 4
Preparation: 20 min.
Cooking: 25 min.

Ingredients

Potato soup

  • 800 g baking potatoes
  • 1 large onion
  • 2 carrots
  • 2 cloves of garlic
  • 1.5 l vegetable stock
  • 2.5 dl whipping cream
  • Salt
  • Pepper

Chive oil

  • 1 dl chives
  • 2 dl olive oil
  • 2 tbsp. lemon juice

Method

  1. Cut the chives into smaller pieces and place them in a small blender or food processor with the olive oil and lemon juice.
  2. Blend until the chives are finely chopped and the oil is smooth. Season to taste with salt and freshly ground pepper, and set the chive oil aside.
  3. Peel the potatoes and cut them into small cubes.
  4. Melt the butter in a large pot over medium heat.
  5. Add the onion, garlic and carrots, and sauté for 5-7 minutes until the onion is soft and translucent.
  6. Add the potatoes and pour in the vegetable stock.
  7. Let the soup simmer for 20-25 minutes, or until the potatoes are completely tender.
  8. Blend the soup directly in the pot with a hand blender, or pour it into a blender and blend until completely smooth and creamy. If the soup is too thick, add a little extra stock or water until it reaches the desired consistency.
  9. Stir the cream into the soup and season to taste with salt, pepper and, if desired, a little freshly grated nutmeg.
  10. Bring the soup to the boil and adjust the seasoning as needed.
  11. Pour the soup into bowls and drizzle chive oil over each serving.

Tip for an extra creamy potato soup

Let the potatoes simmer until completely tender before blending the soup. This gives it a silky-smooth consistency and a naturally rich flavour.

For an even more rounded soup, let it cook for a couple of extra minutes after stirring in the cream. This gives the flavours time to come together and makes the soup extra creamy.

Serving

Serve the potato soup piping hot to bring out its creamy consistency and mild flavours. The chive oil adds a fresh, aromatic contrast, giving the soup both extra flavour and a lovely splash of colour.

To make it look a little more inviting, drizzle a little extra chive oil over each portion just before serving. This gives the soup an elegant appearance and makes it even more appetising.

It is a simple, warming dish that shows how much flavour you can get from just a few good ingredients. The combination of potatoes, vegetables, cream and fresh chive oil creates a creamy soup that is both filling and full of homemade comfort-food flavour.
