Method
Now it's time to get started on the delicious Shrovetide buns. Follow the steps below to ensure your Shrovetide buns turn out perfectly – crisp on the outside and filled with custard and remonce filling inside.
Make the dough
-
Warm the milk in a saucepan from ONYX Cookware until it feels lukewarm to your little finger (approx. 37 degrees).
-
Pour the milk into a mixing bowl and dissolve the yeast in it.
-
Add the eggs, sugar and salt and mix well.
-
Add the flour a little at a time and knead the dough until it starts to come together
-
Then add the butter and knead again until the dough is soft and supple.
-
Put a lid on the mixing bowl and leave the dough to rise in a warm place for 45 minutes.
Make the custard
-
Pour the milk and egg into the saucepan, warm over a low heat and mix together with the hand mixer.
-
Add the sugar, wheat flour and vanilla sugar and continue mixing with the hand mixer.
-
Bring to the boil and cook for 2-3 minutes, stirring until the custard thickens.
-
Pour the custard into a mixing bowl and leave to cool.
Make the remonce filling
-
Use the hand mixer to mix the softened butter with the sugar and grated marzipan in a mixing bowl until smooth.
-
Set the remonce filling aside so it's ready to use.
Assemble the Shrovetide buns
-
Divide the dough into 12 equal squares.
-
Place 1-2 tbsp of custard and 1-2 tsp of remonce filling in the centre of each.
-
Fold the dough around the filling, making sure the buns are completely sealed so the filling doesn't leak out during baking (use a little water around the edges if needed)
Baking in the airfryer
-
Place the Shrovetide buns in the airfryer cake tin (with a little space between each).
-
Bake at 160 degrees for 10 minutes.
-
Carefully turn the buns over and bake for another 2 minutes at the same temperature.
Cool and decorate
-
Let the buns cool slightly before decorating them with icing and, if you like, sprinkles.
